Pull it, put it in a bowl with a banana and wait till it turns ready to eat.

As well as ripening as others suggested, you could make a chutney or relish with green tomatoes.

Will it stay below freezing? If it’s just a couple of cold nights, you could cover the plant to keep frost off. If it’s going to stay below freezing for the rest of the year, it’s time to bring the tomatoes inside to ripen.

At the end of season I usually make green tomato sauce. It’s really tasty and can be canned just like regular tomato sauce.
