  3. I love this video! During the pandemic I was home and cooking non stop. I was searching for the perfect pernil recipe, and this was it! I watch it every time, like today, because we're craving pernil.

  4. Looks like a simple but very delicious recipe. On the Dominican side of the family we cook it different. Along with the garlic and salt, we add sofrito, Dominican oregano, black pepper,soy sauce and lime.

THIS is how the real BOTIQUA prepares and cooks the Pernil .All do respect senora 1st and foremost the Pernil must be cleaned followed by pat drying than making slits and cuts all thru and around the Pernil with the skin still attached . Because we want to score the skin before we start the cutting and peeling the skin still attached to the top of the meat . Now we make the spice mix it consist of 2 TBS of Adobo , 1 TBS of oregano ,1TBS of black pepper , 2 packets of red sazon , 1 TBS of sea salt .Now the wet ingredients 3 TBS of homemade SOFRITO , and 1cup of Xtra virgin olive oil , LAST but not the least you need 2 heads of garlic crushed . Me abuela then mixes all of the wet and dry ingredients to make an awesome delicious and tasty paste rub than you apply by rubbing and filling up those slits . After that she puts the Pernil in the fridgerater covered for 2 days of letting it get marinated . She bakes it from 12 noon until 5 pm at 350 degrees it coke out gorgeous .   7. I’ve watched dozens of videos on how to make pernil! I’ve been making it every New Year’s Eve for about 10 years. This is the simplest, least complicated, most delicious way. No matter how many videos I watch, I refer back to this one.

  10. Ask 10 puerto rican mothers there recipe for pernil and you'll get 10 different variations. They will all taste amazing! The only thing i add to mine is adobo and more olive oil. Ive eaten some that had too much sazon, vinegar, safrito, onion powder and that's all i taste. The star of the show is salt, pepper, garlic and of course the pork. If you cant taste the pork than what's the point. Sometimes less is more. Just my opinion.
