Harcha is a Moroccan Semolina Pan-Fried Bread that has similarities to scones and biscuits. It’s very tasty, and pairs well with most things you would like on bread, like butter, cheese, cream cheese, and even jam or chocolate spread.

Harcha is very easy and fast to make. And do not require any special equipment. A bowl and a frying pan are all you really need. So if you like types of bread like scones and biscuits then make sure to try Harcha. The semolina flour used in Harcha bread makes this special and delicious.

Hot to make this Harcha Moroccan Semolina Pan-Fried Bread.

In a bowl, add 300 grams of semolina flour, 3 tbsp sugar, 2 tsp baking powder, and 1/2 tsp salt. Mix.

Add in 125 grams of melted butter. Mix to combined.

Add in 135 ML milk.

Mix well. Use your hands.

Let the Harcha dough rest for 10 minutes.

Put the dough on a floured surface and start to flatten it out.

Use a rolling pin for a more even surface.

Punch out small cakes with a cookie cutter or something round like a coffee cup 🙂

Take the scraps and roll out and punch out more rounds.

Fry on medium heat until golden brown.

It takes about 3-5 minutes per side. Rotate the Harchas a few times to get more even color.

Flip them and cook for another 3-5 minutes.

Harcha have some similarities with scones and biscuits, and pairs well with both savory and sweet toppings.

My favorite is just plain cream cheese.
