PESTO GRILLED CHEESE
Ingredients:

For the Pesto
1 cup fresh basil leaves
5-6 cloves garlic
1/2 cup almonds
1/4 cup Parmesan
Salt and pepper to taste
1/4 cup extra virgin olive oil

For the Sandwich
4 slices bread
4 oz mozzarella cheese sliced
1 large tomato sliced
butter to brush

    Wasupsallam cobber, pesto is one of my favourite foods, how did you know?;-))))))))) FYI, My Pesto is slightly different in that I use blanched almonds instead of walnuts and romano cheese as well as parmesan cheese and tons of fresh basil. Also a squirt of lime gives it some zest, that is optional…but our recipes are really close;-/, I like to steam potatoes and sweet potatoes and fresh string beans and do pasta which I mix with lots of pesto. Together It all tastes 'next level', especially with extra romano cheese on top and chilli jam;-))) BTW my friend, I hope you are feeling better?;-)
