Now this is a dish that was very popular in many of the South Texas Mexican restaurants. For some reason it’s not on a lot of menus anymore, but back in the day when I was younger it was on everybody’s menu and I remember we used to love to order this dish. I think you’re gonna enjoy it too. It’s called the sombrero.

And in this video I’m gonna show you stepy-by-step how to make it. One of my favorite things about this dish is how it’s served at the table – with all the food under a layer of melted cheese and tortillas all around. You just grab it with your hands and dig in. Let’s fire it up and make…

THE SOMBRERO!

Ingredients:
1lb Fajita (Skirt Steak)
APC WOW! Seasoning
1 Bell Pepper
1/4 Onion
1 Roma Romato
Oxaca Cheese
Corn Tortillas

  2. Yes yes Arnie, as an old white Texan I remember fajita cooked like that from friends. My cuz down in the hill country still cooks about the same. Oh but mine has to have roasted poblamos and cerantos. Oh my. That's a fajita. Cuddo's to my Eagle Pass and beyond friends. Some Mexican cooking mofo's. 😀

  5. I absolutely love you and your videos! I have just ordered my second bottle of OG, I can never be without it again! It is fantastic on everything! You and I are on the same page with the serrano's, I love them! If something calls for a jalapeno, I always replace with serrano! I mostly eat it myself because none of my friend or family can take the heat!! Now, if we could just get someone to make a hybrid serrano that is as big as a jalapeno, so that I can stuff them! I adore brisket and cream cheese stuffed jalapeno wrapped in bacon, but they are never hot enough for me! Have I put an idea into your head? LOL! Or is there already a pepper that has both the size and heat that I am looking for? I was born and raised in Brownsville at least my first 11 years were spent there. I wish we had never moved!

  6. In 1984, I moved from Wisconsin to McAllen. It was my first year of teaching at McAllen ISD. I was lonely because I missed home. Driving around, I just pulled into a place just off of 10th street called Casa del Taco. I had the Sombrero de Fajita and I told the owner the was the greatest meal I ever had in my life!! That was my introduction to real Mexican food (I know, Tex-Mex). But, when you come from Wisconsin, this truly was the first time for Mexican food. The best food ever!! The owner became a friend of mine and over the years he would meet my wife Rosa then years later my sons. Their recipe had bacon in it and the food was cooked in that bacon grease. This was the plate that changed my life forever.

  7. Would like to see more barbecue sauce with regular mesquite or charcoal. Some of us cannot afford those fancy grills just like cooking in the oven
