what happened to the cumin? you never added it to the recipe…? Cumin is soooo important.
A good enchilada casserole instead of rolling every shell do it like a lasagna use some good red sauce with some hamburger and peas shredded hash browns or diced and some good yellow or white corn shells instead of noodles mix some Pedro Lopez chili powder and cummin red sauce layer it instead of roll them but good stuff a shepherd pie like Spanish style for sure man athletic Mexican food. Even if rolling make sure you dip your corn shells in the red sauce for Flavor and pour the red sauce over and cheese great food man
