Shopping List:
4 Leg Quarters
2 tbsps walkerswood Jerk
4 green onions
1/2 yellow onion
1-2 Scotch Bonnet or Habanero peppers
2-3 tbsps brown sugar
1/3 cup soy sauce
1/2 cup orange juice
1 tsp fresh thyme
2-3 cloves garlic
1 tsp fresh ginger
All-Purpose Seasoning (salt, pepper, garlic, onion powder)
cinnamon and nutmeg (1/4 tsp each – optional)
2 tsps ground all spice
2 limes

Directions:
Combine all ingredients into a blender and make marinade. Season marinade to taste and adjust to your preference. Marinade chicken for 4-24 hours.

Grill: Setup grill so that you have an indirect and a direct side. Start skin side down and rotate between direct and indirect as needed to ensure even cooking and color. Chicken is done at 175 degrees internal temp.

Oven: Preheat to 375 and place chicken on a wire rack. Bake skin side up for 20 minutes and then flip. You can broil the chicken for the final 5-8 minutes to get deeper color if needed. Chicken is done once it hits 175 internal temp.

  4. There’s a Caribbean restaurant where I grew up that has always made incredible jerked wings — they won local food fests and wing fests in the area for several years. They bottle their own sauces: jerk, Habanero pepper, marinate, etc. Look for Krista’s sauce online.

  7. I’ve used this recipe twice, and it is so good! I will say that using scotch bonnet peppers makes a difference. The first time I used habaneros and it was really good, but the second time I used scotch bonnets and babbbyyy! 🔥
