Chinese chives, among other things like bean sprouts, are hard to come by here in Romania. I thought since chinese chives are also called garlic chives, maybe I can replicate the flavor with normal chives + garlic.

THE SAUCE:
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp dark soy sauce
1 tsp sesame oil
½ tsp sugar
½ ladle chicken stock

Does the chicken stock make it less of a “dry” chow beef ho?

I don’t like you way of steer frying what you cook.. overacting is not needed
In other words, without soy sauce and oyster sauce, not to mention corn flour, you can't prepare anything. All recipes are all the same. Replace the steak with chicken and you're done.
