1 cup cooked quinoa –
1/2 pitted kalamata olives halved –
2 cups grape tomatoes halved –
4 small cucumbers chopped –
1/3 cup diced red onions (1 shallot) –
1/2 cup crumbled feta cheese –

Salad:
In a large bowl combine: the cooked quinoa with the kalamata olives, tomatoes, cucumber, red onion and feta cheese.
Dressing:
In a tall plastic glass add: 1/3 cup olive oil, 2 tbsp red wine vinegar, 1 tbsp lemon juice, 1 tsp honey, 1 clove garlic, 1 tsp dried oregano, 1tsp mustard, 1/4 tsp salt and 1/4 tsp black pepper. Blend everything with a hand mixer.
Drizzle the salad with dressing and toss to combine. Add more salt and black pepper if needed.
