Watermelon Feta Salad
– 1/2 of a medium watermelon cubed
– 1/2 cup of chopped mint
– 4 baby Persian cucumbers chopped
– 1 cup of crumbled feta cheese
– 1/2 cup of cut up pistachios
– 1 tbsp of chopped shallot
– 2 fresh basil leaves
– Juice of 1/2 a lemon
– Zest of a whole lemon
– Salt & Pepper to taste

I make watermelon salad all summer long. Sooo good i do mine with some balsamic vinegar instead of the lemon. Im gonna try it with the lemon
I’ve made this quite a few times instead of lemon I use lime. I also add a sliced red onion, but I’m gonna try it with the pistachios for an added crunch and deliciousness.
We absolutely love watermelon salad during the summer months. We've never added pistachios but those are our favorite nuts & usually use EVOO & balsamic & add red onion. We will definitely try your recipe. We love you all. ❤
