  2. The recipe doesn’t get specific enough, it keeps clumping up when adding eggs and chocolate together. I’m using 70% cacao and idk if that’s the problem but it doesn’t matter how many times I try to change something about it the recipe doesn’t get into enough detail

  4. I made chocolate mousse for my Valentine this year too, but using very different techniques and ingredients. I used cream cheese, powdered sugar, and cocoa powder in the base, then whipped the cream separately and then folded that into the base. Then I topped it with raspberries.

  5. Can I triple this recipe and substitute half of the water for espresso?

    Also, if triple-ing the recipe is fine, can I put all of it onto a pie dish to chill and cut it into slices after maybe 6 hours?

  7. Do NOT replace the dark chocolate with milk chocolate!!! I ran out of dark and substituted milk and it did not come out right at all. It did not get to that fluffy, airy quality that the other one does. You would have to cut back significantly on the cream, eliminate the sugar and reduce the butter. It came out kind of soft pudding consistency. I usually pipe my chocolate mousse into the glasses with a pastry bag with a rose tip. Can’t do that with this stuff. Had to pour it into the glass. Well, live and learn. That is what cooking is all about anyway.
