What you can do is when you chop the tomatoes and cucumber is to put them in a separate bowl and mix the dry burghoul with it to soak up all the liquid. (That's how I do it any way) and when the burghoul is soft enough mix all the ingredients together.
Oh-oh, now you're going to have me doing more Web searches. I've had some what're called Greek salads, so think to have a pretty good idea of what they're generally like, but Nicoise? I've only heard of it; not sure if I've ever seen any. Wow. Look at that, & then tell me I'm not confused. 🙂 Vast variety.

Hmm. That might make it a bit intense, but it's an interesting thought.
parsley is a key ingredient in tabbouleh. If you used a substitute it wouldn't be Tabbouleh anymore.

That's not how we make tabbouleh here in Lebanon, but I would try this one, seems delicious.
