Risotto is one of classic dishes that everybody loves. It’s just arborio rice, chestnut and porcini mushrooms cooked in white wine and a flavourful vegetable stock and finished off with Parmesan or Gran Padano cheese. Mushroom risotto is one vegetarian dish that even dedicated carnivores like me will enjoy. Italians will argue until the end of time about the correct way to make it, but I think this is a pretty convincing recipe for an Italian risotto.

  1. Keef, I am interested in making this recipe, however, after the pandemonium of 'Christmas 2014' I always check my cupboards for ingredients when I follow a recipe, any way enough about the past.
    I only have 35 black peppercorns, will it be okay? Kind regards

  2. I only got 35 black pepper grains left in my jar. Do you think that this would possibly cause an issue? Because if it dose I'd have to go to the supermarket and buy 2. But as i only go once a month and that was yesterday, I'd have to wait a hole month until i cud try to recreate this dish. Oh boy i hope you can wait until next month before you come out with the next recipe. Because that would cause other issues and oh my got I'm going dizzy I'm all confused. And all that for to f. . . pepper grains! !!! lol

  6. I normally use chicken stock to make my risotto. I'm not a vegetarian. 🙂
    Occasionally I do cook it for a friend of mine who is vegetarian though. When I do, apart from omitting the obvious stuff like butter and cheese (which by itself makes the risotto not worth eating IMHO) I add umami from shiitake mushrooms. Basically I steep dried shiitakes in water for 1-2 hours (about 3-4 large dried caps to 1L water), squeeze the re-hydrated mushrooms well to recover as much of the liquid as possible, then use that for the risotto. The shiitakes in the meantime get chopped finely and quickly sauteed in a pan with a bit of garlic in a little vegetable oil, then added to the risotto together with the other mushrooms.
