When I make pickled onions, mostly the same recipe, but I put the hot vinegar mixture in the jar and lod on then let it drop to room temp before putting in fridge and it's so amazing that way. Still crunchy and fresh. But it let's more pickling flavor into the onions and the color is so much more vibrant

Can any kind of vinegar be used? Like a rice wine vinegar or an apple cider vinegar?
I usually just add the sliced red onions in the jar then mix up white vinegar with some white wine vinegar or rice wine vinegar and some sugar and pour into the jar then give it a good shake and leave in the fridge over night and they’re done! 👌🏽
