A step by step guide to making an authentic fish tagine from Morocco. I use a proper tagine (pot) to cook it in but it isn’t necessary, any other covered pot or pan will do.

Filet of cod (skinless)
1 Large Carrot
I large stick of celery
2 Lemon
1 large onion
3 potatoes peeled (place in water until ready to use them)
Coriander
Parsley
2×1 Inch of peeled ginger
2×2 garlic cloves
Pinch of saffron threads
½ tsp ground cumin
1 tsp ground coriander
½ tsp paprika
Salt
pepper
Olive oil
Would normally add one red and 1 green pepper plus one large tomato, sliced.
½ tsp turmeric
½ cup olives
