How to prepare a homemade focaccia tricolore style with 3 different toppings in a standard kitchen oven
This summer, Italy has practically won anything: Eurovision Song Conetest, Football Euro 2020, 100 m during the Olympics and just recently even the European record for the hottest temperature ever recorded (48.8 degreees Celsius). I took this as a motivation to create the tricolore focaccia.
Here’s my detailed video guide on how to prepare a homemade focaccia in a standard kitchen oven. This recipe is taking advantage of a highly hydrated dough. The result is a nice crispy and light focaccia, which will be easy to digest. Please watch the entire video to fully understand the process.
The „tricolore“ colours of the Italian flag will be represented by rosemary (green), onion and scamorza cheese (white) and my homegrown datterini tomatoes with a bit of origano (red).

Ingredients for 4 persons:
350 g of Italian flour (tipo 00)
250 ml of warm water
50 ml of olive oil
5 g of yeast
rosemary leaves
½ golden onion
100 g of scamorza
5-8 cherry or datterini tomatoes
origano
salt
sugar
