—any one or mix you prefer including button, portobello, chanterelle and porcini
Arborio or carnaroli rice – 1 1/2 cups / 320 g
Garlic – 2 cloves
Shallot – one
Parsley – handful
White wine – 1/2 cup / 120 ml (pinto grigio is good)
Vegetable broth – 8 cups / 2 liters
Olive oil – as needed
Fine salt – to taste
Black pepper – to taste (optional)
