All of the flavors of traditional Greek Salad with a few satisfying twists. Enjoy!

Greek Cannellini Salad
Recipe recap:

1 15oz Can Cannellini Beans, rinsed and drained
2 English Cucumbers, seeds removed
1 Medium Red Onion
2 Lemons
1/2 C Kalamata Olives
1/2 C Sun Dried Tomatoes, sliced and packed in Olive Oil
1 tsp Oregano, dried
Salt and Pepper

Zest and juice lemons in a large bowl. Dice onion into 1/2 pieces, and mix with lemon juice. Slice cucumbers lengthwise, remove seeds with a spoon, slice lengthwise again and then cut into 1/2 in chunks. Add cucumbers, beans, olives, and sundried tomatoes (with oil) to the bowl. Season with 1 tsp salt, 1/2 tsp pepper, and 1 tsp oregano. Stir well to combine all ingredients. Optionally, serve with crumbled feta cheese sprinkled overtop. Enjoy!
