Ingredients (serves 4)

70g (2/3 cup) walnut halves
80ml (1/3 cup) olive oil
2 tbs white wine vinegar
1 tsp Dijon mustard
85g (1/3 cup) whole egg mayonnaise
1 tbs fresh lemon juice
2 red apples, quartered, cored, cut into thin wedges
1 celery stick, ends trimmed, thinly sliced
8 baby cos lettuces leaves
salt & pepper to season

  1. I refuse to use red apples,I use green apples!!!!Also pour some of the lemon juice on the apples early then they don't turn brown.

  2. Would it be better to break the lettuce into pieces and mixing it in with the rest? I Judd dont like the lettuce sitting there like those stupid ice cream bowls made out of ice cream cone. I'd prefer the lettuce be mixed in.

  3. The apple pieces are way too large. Same with the celery. Bust out the mandolin or get a little more ambitious with your knife next time and make them more bite-sized.

  4. interesting take on the waldorf salad! Must try try your version…i like idea of having a vinaigrette and mayo dressing together! cheers!

  5. I love waldorf salad, it's a childhood favorite. The only differences in the salad I remember is that the apples were cut into smaller pieces and the salad was marinated overnight in the dressing. There are a few variations on it though and of course it doesn't matter, it still tastes the same.

  6. id eat it… but Id just leave out the mustard in the recipe.. cos mustard is vile… lol
