This week, join Natasha in making a family favourite, mushroom risotto!

Ingredients:
1 ½ cups of arborio rice
6 cups of veggie broth
1 cup of pancetta or 6 slices of bacon chopped
10 oz of mushrooms, sliced
2 tbs of olive oil
1 medium onion
1 cup of dry white wine
1-2 tbs of butter
½ cup of freshly grated parmesan cheese
Salt and pepper to taste

  1. Risotto is not supposed to be to the tooth. The whole reason for stirring it is, you are blooming the rice.
