Spanakopita(Spinach Pie Triangles)

Ingredients:

1 package of Fillo Dough
500 gr of Greek Feta
2 x 16oz of Frozen Spinach
1,5 cup of Parnassos Cheese (optional)
1 cup of Greek Olive Oil
6 Green Onions
1 bunch of Fresh Dill or 2 Table spoons of Dry Dill
Salt and Pepper to taste
3+1 eggs

Method:

Defrost two 16oz packages of frozen spinach. Squeeze excess liquid out, put in a large bowl.
Crumble feta, grate Parnassos cheese, add 3 eggs, mix well.
Add pepper. You do not need to add salt if using Parnassos cheese, because it is already quite salty.

Cut your Fillo pastry into 3 strips length wise.
For each tingle you need to use two sheets of Fillo dough.
Brush each with olive oil, put filling in a corner and fold into triangles.
Poke each triangle with a knife. It helps to let the steams from the filling out when baked.
Brush with egg or oil oil.
Bake in a preheated to 350 Degrees Fahrenheit oven for 30 min, or until golden brown.

  3. Can these be made ahead of time (prior to last egg and baking) and stored in the refrigerator or even freeze them?

  4. I had these pastry everyday in Rhodes & Turkey (they had similar version) last month, so good! I missed this so much !!! need to try making this
