Dear Pasquale, 1) You haven’t told us if you use canned Beans or Dry soaked overnight, then boiled to perfection? 2) what is the best alternative vegetable or replacement for Escarole? We don’t have it in my country. Thanks.

So, I made this tonight and it was absolutely amazing. I did not put in the pancetta because I am vegetarian but, even without it, it was so, so good!
