Quinoa Pomegranate Salad

This pomegranate quinoa salad is none other than a burst of tempting flavors loaded with ruby red crystals i.e. Pomegranate seeds perfect for cold days. Combined with hearty green grass and crunchy nuts for extra texture and pops of blissful flavors it’s like a dream meal in one. It’s also fantastic to make your holidays more enjoyable, though you don’t have to wait to set an occasion table to enjoy this salad.

No wonder this is one of my favorite recipes as it is not only full of divine taste. But also healthy fats, satisfying protein, vitamins, slow-digesting carbs, and minerals. Not to mention the salty spices, juicy apples, and sweet balsamic dressing. Just imagine a bite of all these things in one spoon. Isn’t it spectacular?

Is pomegranate quinoa salad served cold or hot?
It is recommended to serve this salad chilled or at room temperature for incredible taste. If you want to eat it in as your A.M meal and don’t have much time, the great way is to make this healthy green bowl the night before. It will give enough time for the ingredients to blend properly. However, don’t add arugula to the salad until ready to serve so it does not wilt.

This salad is a perfect combination of everything from fresh greens, sparkling pomegranate seeds, quinoa, and nutrient walnuts. So let’s unveil the ingredients list.

Ingredients
1. Dry quinoa: 1 cup
2. Pomegranate seeds: 1 cup
3. Baby arugula (rocket): 2 cups (chopped)
4. Apple: 1 (cored and chopped)
5. Walnuts: ½ cup (chopped)
6. Feta: ¾ cup (crumbled)
7. Cranberries: ½ cup (dried)
8. Lime wedge
o For dressing
1. Extra-virgin olive oil: ½ cup
2. Balsamic vinegar: ¼ cup
3. Dijon mustard: 1 tablespoon

Spices
1. Salt: to taste
2. Black pepper: to taste

Instructions to make:
1. Start by cooking quinoa according to the directions mentioned on the package and set aside to cool.
2. Take a mason jar and add all the dressing ingredients into it.
3. Season the dressing ingredients with salt and black pepper and shake vigorously until combined.
4. After that, in a large bowl, add cooked quinoa, pomegranate seeds, apple slices, walnuts, arugula, cranberries, and feta in it.
5. Drizzle the quinoa pomegranate bowl with dressing and toss to combine well.
6. Cover and keep it in the refrigerator for 1 hour up to overnight.
7. Give it a toss before serving and enjoy.
