🍒🥧It’s pie season guys and that means one thing.. SHE’S MY CHERRY PIE!! 🥧🍒 Super flaky buttery pastry with the most delicious, sweet, sticky cherry filling topped off with a pastry lattice – DIVINE! Don’t forget to tag us in your snaps over on instagram because we love seeing how you get on!

We used an 8″ enamel pie dish:

CHERRY FILLING
1000g (pitted) cherries cut in half
60g light brown sugar
1/2 lemon juice
(5-6 mins)
65g caster sugar
25g cornflour
¼ tsp sea salt
1/4 tsp almond extract
3/4 tsp vanilla extract

PASTRY
380g plain flour 
¾ tsp salt 
255g unsalted butter – chopped and in the fridge or freezer for 10 mins.
1 tbsp cider or white wine vinegar 
8 – 8/12 tbsp cold water – (put ice cubes in it)

EGG WASH
1 egg
1 tbsp milk

  1. Pie season is my favorite! Just made the first of the season (apple here). Great tip from NYTimes' Melissa Clark: put the (metal) pie pan on a preheated cookie sheet and the crust stays extra crispy. Hard-pressed to choose a favorite pie but love pecan, blackberry, blueberry, strawberry rhubarb, coconut custard, and YES, cherry! Can't wait to try this – tks S & D!

  13. Looks great! Can you use frozen cherries instead of fresh? Buying a kilo of fresh cherries is quite expensive
