Delicious Grilled Eggplant and Mozarella Salad (Vegetarian)

4 Lebanese eggplants
1 romaine (baby cos) lettuce
2 cups of mixed lettuce
8 oz (220g) mozarella
1 red bell pepper (capsicum)
1 cup of olives

For the dressing:
2 cloves of garlic
4 tbsps of extra virgin olive oil
2 tbsps lemon juice
salt & pepper
