Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Focaccia al rosmarino is a common focaccia style in Italian cuisine that may be served as appetizer, table bread, or snack.

Ingredients:
600g all purpose flour
7 g dry yeast
10 g sugar
5 g salt
70 ml vegetable oil or olive oil
170 ml warm water
170 ml plain yogurt (laban)
50 g green olives
50 g kalamata olives
50 g cherry tomatoes
fresh zaatar (tarragon) dry zaatar
For the surface:
2-3 tbsp (30-45 ml) ml extra virgin olive oil

Method:
Activate dry yeast with sugar, salt, oil, water and plain yogurt in a large bowl.
Pour the liquid ingredientce into the flour and kneet the dough until you have a soft dough.
Let the dough rise for 2-3 hours.
Pour some olive oil on surface of baking tray. Place the dough gently.
Press dimples into the top of the focaccia.
Top with fresh herbs ( zaatar, thyme ), green olives, kalamata olives and cherry tomatoes. Pour over some olive oil and sprinkle with dry zaatar.
Bake the focaccia bread on a preheated (180 C – 360 F) oven for a 25-30 minutes, oven until the golden brown.
