  9. In România we put milk not water and mix with corn, so use milk. Try this. We call this mamaliga!
    This food is specific to shepherds, because in the alpine pastures they had lamb meat and ground corn.

  12. For the polenta there is an easier way. Bring most of the water up to a boil. Just before adding the polenta, mix it with the remaining cold water. That will prevent any lumping. The second suggestion is to put the polenta in the oven after the first 10 minutes or so and let it cook there. I would use a Dutch Oven covered for that. As for adding butter at the end, the best is browned butter. Heat the butter slowly until it just starts to turn brown, then add it to the polenta.
