a drizzle of olive oil (if required)
2kg (4.4 lb.) beef shank, marrow exposed (4-6 pieces. Approx. 1 per person)
2 carrots, diced
2 celery, diced
1 onion, diced
4-5 cloves garlic
4 sprigs thyme
1 sprig rosemary
2 bay leaf
236ml (1 cup) white wine (preferably Italian)
472ml (2 cups) chicken stock
flour, for dusting
salt and pepper
Gremolata
2 tbsp. parsley
1 tbsp. lemon zest
2 cloves garlic, grated

I use a teabag style bouquet garni, a tin of cherry tomatoes and red wine in my Osso Bucco.
The olives addition sounds interesting ๐ค, have to try that.
Yes creamy or cake polenta is better than mash ๐คค
