It is cooked from veal or beef shank with marrow bone or hollow bone with bone marrow. In Italian, osso buco means literally a bone with a hole. 113g (4oz) pancetta cubed
a drizzle of olive oil (if required)
2kg (4.4 lb.) beef shank, marrow exposed (4-6 pieces. Approx. 1 per person)
2 carrots, diced
2 celery, diced
1 onion, diced
4-5 cloves garlic
4 sprigs thyme
1 sprig rosemary
2 bay leaf
236ml (1 cup) white wine (preferably Italian)
472ml (2 cups) chicken stock
flour, for dusting
salt and pepper

Gremolata
2 tbsp. parsley
1 tbsp. lemon zest
2 cloves garlic, grated

    What's better than the Osso Bucco?
    The bone marrow!

    I use a teabag style bouquet garni, a tin of cherry tomatoes and red wine in my Osso Bucco.
    The olives addition sounds interesting ๐Ÿค”, have to try that.

    Yes creamy or cake polenta is better than mash ๐Ÿคค
