Another family recipe that is base to many of our savoury recipes. #CookingwithStories for #MealPrep is the easy way to make sure I always have garlic quickly available.
My mother´s godmother and auntie was the master of “salmoura”/brine, preserves and jams. Before the time of refrigerators yes, just a few 60 years back there was no electricity, can you just imagine? Well, they use the first acidify the garlic and herbs with vinegar, and then would add olive oil, salt and close the jars, but only during the cold months and would have it in the cold storage.
This should last for 3 months maximum.

Ingredients:
Garlic Cloves
Portuguese Olive Oil
Vinegar
Flor de Sal (Fleur de Sel)
Sprig of Rosemary

UTENSILS:

Bowl:

PREPARATION:
Peel all the garlic; I shake it first and then soak it because it is easier to peel
Add vinegar to all your garlic, (on this recipe I spray the green apples vinegar in all garlic), and allow to sit for two days with the vinegar
I add Flor de Sal on the bottom of the jar, (a pinch of salt, add to your taste)
Add the garlic cloves and then cover completely with Olive Oil.
I want to add a sprig
Top with another pinch of Flor de sal.
Close tightly and save up to 3 months in the fridge.
By acidifying the garlic and salting it I am killing the possibilities of developing botulism.

  1. what kind of salt? and how much in measurement so the oil doesn't get too salty and how much apple cider vinegar so it doesn't get too vinegary? the flavoured olive oil could be used for dressings, cooking etc. after garlic is gone
