Loubia: A delicious Moroccan stew of tender white beans simmered in a savory tomato sauce.⁣

This recipe is inspired by the @mina collection of Moroccan plant based bean stews.  It can be made in an electric pressure cooker as outlined below or cooked in a heavy bottomed pot with an adjusted cooking time.  Hope you enjoy!  ⁣

2 cups dried cannellini beans, soaked overnight ⁣
4T extra virgin olive oil⁣
1 medium onion, grated ⁣
3 cloves of garlic, grated⁣
1/2t cumin⁣
2t paprika ⁣
1/2t turmeric ⁣
2t ginger ⁣
1/2t black pepper ⁣
2 large tomatoes, grated ⁣
1T tomato paste⁣
1.5 T finely chopped parsley ⁣
1.5 T finely chopped cilantro ⁣
1 liter water⁣
2t salt, plus more to taste ⁣

Start by soaking the dried cannellini beans overnight.  After soaking, drain and rinse the beans.⁣

In an electric pressure cooker set to sauté mode, add the olive oil, grated onion and garlic.  Sauté for a few minutes until onions are translucent.  Add spices, let cook for 30 seconds – just until fragrant.  Add grated tomatoes, tomato paste, parsley, cilantro, white beans, salt and water.  Ensure your pressure cooker is not filled beyond the maximum fill level.⁣

Cooker on highest pressure for 25 minutes.  Release pressure manually and check to ensure the beans are tender and the sauce is well seasoned.  Add additional salt, if necessary.⁣

If the beans require additional cook time, reseal the pressure cooker and cook on high pressure for an additional 5 minutes. ⁣

Loubia can be made with a thicker or thinner sauce, depending on your preference.  If you’d like the sauce to be thicker, set the pressure cooker to a sauté setting, bring to boil and simmer until sauce thickens.⁣

Serve with crusty bread and enjoy!!
