Ingredients Needed –

– 1 cup of cooked rice
– 1/3 cup of half and half
– 2 tbs of sugar
– 1/4 tsp vanilla extract
– pinch of salt
– raisins, nuts, etc (optional)

30 second bursts in the microwave until thickened and done (be careful that it doesn’t cook over)

  1. Big fan of rice pudding. I like mind with raisins 😊. You can also make a quick fried rice with your leftover rice.

  2. This is what my Momma made for me on cold morning because I hate oatmeal. She called it rice cereal. Slight difference in hers and yours, she used nutmeg in it and sprinkled cinnamon over it before serving. I've since made this for my kids and they loved it.

  3. My dad grew up eating ice cream in rice and got us kids eating it, too. Most of my friends are repelled by the idea, but the ingredients for ice cream and pudding are basically the same. It's great if you like cold rice pudding but doesn't work as a hot dessert!

  4. Used to cook ricepudding with those tiny pearls of rice pudding, wonder if you could use arborio rice too, that goes nice and stodgy.
    Its nice to see a quick meal for 1 and something that doesnt use up lots of electric because of the energy crisis prices.

  6. I often make rice pudding (the homemade custard version) from leftovers. I add raisins for my husband's preference.😊 I don't know how it all came to be, but this is the dessert that I would always make when my parents had company over when I was growing up. Glad you found a good way to make the quick singe serving version.

  7. I've done the quick, easy, microwave dessert before too. I also use a bit of nutmeg and raisins like others have said they do. For a longer version, I've cooked rice in milk instead of water over the stove with raisins to make those plump, then fold in whipped cream after the rice is cooked and cooled, add cinnamon and nutmeg to taste. Some might need to add sugar for me the whipped cream is enough. If I'm feeling ambitious, then I'll do the egg custard style that's baked in the oven.

  8. I tried this recipe. If you are expecting the custardy sort of texture, you will be disappointed – I assume because there is no egg/custard in this recipe. It tastes like rice pudding, but doesn’t have the same consistency. It’s good in a pinch, But I prefer the real thing. Thanks for sharing new ideas with us!!

  9. How about just putting the cook power on 5 and then cook time 3 and a half minutes then it won't boil over . That's how I make tapioca pudding

  11. I cook rolled oats in the microwave. I cook it for 5 min, 45 seconds on 50% power and it never boils over. I use 50% power for a longer duration anytime I have to boil.
