Bulgur wheat is a popular grain in Turkiye and “Fellah Kofte” (a.k.a Sarimsakli kofte) is one of the most exquisite variations of bulgur. It is a flavoursome, hearty, and budget-friendly dish from the Mediterranean side of Turkiye. It can be eaten hot, warm, or cold. It’s also a famous party appetiser and is naturally vegan.

FELLAH KOFTE INGREDIENTS
– For the kofte dough –
* 400 g fine bulgur 2 cups (white or brown FINE bulgur)
* 550 ml hot water
* 6 tbsp all-purpose flour
* 1 tsp Turkish pepper paste or 1 tsp paprika
* 1 tsp ground cumin
* ½ tsp salt
NOTE: You can use 1 tbsp of water while kneading the dough.

– For the kofte sauce –
* 4 tbsp sunflower oil (or olive oil, vegetable oil)
* 1 tbsp pepper paste (heaped tablespoon)
* 3/4 tbsp tomato paste
* 3 garlic cloves (pressed, minced or grated)
* ½ bunch parsley
* ½ tsp ground cumin
* 1 tsp salt
