Stuffed Portobello Caprese The BEST WAY ‼️ FULL RECIPE BELOW ⬇️

This is a family favorite as my version of Portobello Caprese is stuffed full of flavor as I combine juicy cherry tomatoes, fresh basil, mozzarella (Boccincini) and roasted red peppers to stuff the mushrooms. It’s caprese meets portobello that’s easy to make for dinner or serve as a side that your whole family will enjoy. Happy stuffing! Enjoy from my family to yours.

Ingredients
◦ 3 large Portobello mushrooms
◦ 4 small fresh mozzarella per Portobello
◦ 3 cherry tomatoes per Portobello
◦ Roasted red pepper or sun dried tomatoes chopped
◦ 3-4 leaves fresh basil

Marinate
◦ 1/3 cup Olive oil
◦ 1/3 cup of balsamic vinegar
◦ Garlic olive oil or mix any oil with crushed garlic
◦ Dried oregano
◦ Italian herbs (dried parsley, dried basil)
◦ Ground black pepper

Instructions
1. Preheat oven to 375F
2. Twist off the stems of the portobellos and scrape off the gills with a spoon.
3. Clean mushrooms with a damp paper towel and spread your marinade mixture throughout. Watch video to see how to clean your mushrooms.
4. Place portobellos on a baking tray lined with parchment paper and bake for approx 10 minutes. Remove from oven and drain any excess liquid.
5. Drizzle balsamic vinegar, garlic oil on the mushrooms and place fresh mozzarella, cherry tomatoes, basil and chopped roasted red peppers in each mushroom.
6. Place in oven until cheese has melted. Remove and serve with arugula.
