Skillet Bourbon Apple Crisp
recipe by shereen pavlides

for the topping:
4 tablespoons unsalted butter
1/2 cup packed light brown sugar
1 cup old fashioned oats
1 cup rice krispies
1/4 cup all purpose flour
1/4 cup finely ground almond flour (such as Bob’s Red Mill)
1 teaspoon ground cinnamon

for the filling:
1 freshly squeezed lemon (2 tablespoons juice)
6 honey crisp, fuji, pink lady, granny smith or gala apples (about 3 1/4 pounds)
4 tablespoons unsalted butter
1/2 cup sugar
2 ounces bourbon
2 tablespoons all purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3/4 cup chopped pecans – divided

vanilla ice cream

heat oven to 350 degrees F.

how to make the topping:
Melt butter in a 2-quart sauce pot over medium-low heat. Stir in brown sugar until it’s smooth (the texture will be like a caramel sauce), 1 – 2 minutes. Remove from the heat. Let cool slightly.

In a large bowl, add oats, rice krispies, flour, almond flour and cinnamon. Toss to combine. Pour brown sugar butter mixture into the bowl with the oats and toss until the raw flour mixture is moist and combined.

how to make the filling:
Place lemon juice in a large bowl. Peel, core and slice apples into 1/2-inch wedges and toss into the bowl with the lemon juice, to prevent them from browning while working.

Melt butter in a 10-inch cast iron skillet or non-stick skillet over medium-low heat. Remove from the heat. Toss in the apples, sugar, bourbon, flour, cinnamon and salt to evenly coat. Sprinkle half of the pecans over the apples. Top and cover apples with the oats mixture. Bake until the apples are hot, bubbly, tender and the oats are golden brown and crisp, 45 – 50 minutes.
Sprinkle the remaining pecans over top of the apple crisp and warm through in the oven for 1 minute. Remove to cool and let set to thicken the sauce. {Note: as the Apple Crisp sets, the sauce will thicken}
Serve warm or at room temperature with vanilla ice cream.

prep: 20 minutes
bake: 50 minutes
serves: 8

  2. Can I make this in a Corning Ware dish? I don’t have cast iron. 😔 also, can you make this recipe without bourbon?

  4. Shereen, I love that saute pan you're using in the beginning to melt the butter and brown sugar. May we know what the manufacturer is? I use All Clad but I like those rounded sides. Gardis in CT
