Recipe:
– 1 medium shallot finely chopped , you can also use red or yellow onion
– 4 garlic cloves, minced or finely chopped
– Flat leaf parsley, finely chopped, about half a cup

– 1 teaspoon dried oregano
– 3 tablespoons red wine vinegar, you can also use lemon or lime juice
