For many of you, you no longer have to get up early to go to work/school because of lockdown/social distancing, so you might have more time to make a pancake breakfast. (I am not so lucky, with a baby at home and no more childcare help…I’m busier than ever before!) But I wanted to share my ultimate, best pancake recipe for those who DO have time for a more leisurely breakfast. This is the best pancake recipe I’ve ever tried. So good I’ve been making it for over 10 years and still haven’t had any better ones! So light, super fluffy, just perfect.

PS. These freeze REALLY well. You can put finished pancakes in the freezer, and to reheat, microwave them for 20-30 seconds so they are no longer frozen, then pop them in the toaster to crisp up the exterior. It’s just as good as fresh!

I have a pancake recipe myself which is the runny type of batter but still rises as thick as this, and now I'll be sure to try this out soon since you've mentioned how you never tried other recipes after this.   3. Never really thought about dipping my pancakes but that's a cool idea. However, what I do is cut my pancakes into squares. Then, I poor syrup over them. Got that from my paternal grandmother.

  6. I made it today!! Really best pancake recipe.. my husband said better than Mcd's. I converted it to grams and used oil instead of butter. total I made 5 big, 6 small pancakes. Thank you!!!
    • 120g All purpose flour
    • 115g Cake flour
    • 1 tsp Baking soda
    • 1 tsp Baking powder
    • ½ tsp Salt
    • 280g Greek yogurt
    • 245g Milk
    • 1 tsp Vanilla Extract
    • 2 Eggs, white and yolks separated
    • 15g Oil
    • 35g Sugar

  7. I give you a more easier fast pancake
    Recipe two eggs I cup milk two tbs sugar 1 tsp baking power tsp vanilla option 1/1/4 cup flour. Salt

  9. These are the best pancakes. So light, fluffy, & delicious. I tried your waffle recipe & it was very good but i used this batter in my waffle maker & they came out way better! Crispy on the outside & warm & fluffy in the middle. My wife & 4 yr old daughter love them too. Thank you! -Stan

  11. You sound like me when I'm trying to cook something and that has happened to me with trying to make the sofa or stiff peek ect. I must say you did a wonderful job on making those delicious pancakes that I've never tried but I would love to and now that I've watch you do it I'm gonna try myself I'm excited. Thanks for your down to earth and explanation of how to make what I've been wanting to try ever since I ran across those Japanese jiggle cakes. This looks like a mini version to me .

  14. If you ever have leftover buttermilk you can freeze it, it freezes beautifully and keeps for a few months 🙂
