4 slices of thick-cut bacon, sliced (about 113g or 4oz total)
Canned refried beans (1 15oz/425g can)
Fresh lime juice (from 1 lime)
Ground cumin
Garlic powder
Onion Powder
Chili flakes
Salt
Cracked black pepper (to taste)
Water
White corn tortillas (4)
Eggs (4)
Chile crisp or sriracha
Queso fresco, crumbled
Pickled red onions or jalapenos

Hashbrown Quesadilla Taco:
1 medium russet potato (about 200g)
Olive oil
Salt
Black pepper
Chihuahua cheese, shredded (about 100g)
Corn tortillas (4)
Eggs (4)
Pico de gallo (store-bought or homemade)
Hot sauce or taco sauce
Fresh cilantro, chopped


Chorizo Egg Taco:
Mexican chorizo (5oz/135g for this recipe)
Eggs (4)
Salt (to taste)
2 ripe avocados

  4. In the first taco you put the cheese in the outer part of the tortilla, yep, corn tortillas have an inside and an outside.

  5. el Pato is my go to for a green sauce if I am traveling. Typically easy to find, tasty and not too strong in any particular flavor.

  6. "anyone can make in 15 min" not 5 min later … minimum cook time for potatos alone is 16 min not including prep or assembly.

  10. You can cut down the hashbrown time by just using frozen hashbrowns. Same idea with the pico.

  12. I love this simplicity. Everyone thinks this is hard, but it’s so simple to produce. It’s like guacamole, you can do a case in 20 minutes and worry about the rest of your prep. Joy is making stuff fresh, but we all have time limits, give it your best and you will be happy.

  13. 1. No thanks. 2 I'd eat it, but skip the egg, would not go out of my way to make it. It needs some other meat. 3. Na. better cuts of meat and no egg.
