Todays recipe is this delicious chick pea labenese fatteh.

Ingredients:
1 can chick-peas
4-5 khubus (thin pita bread)
¼ cup olive oil (for frying)
1 medium sized tomato
1 medium sized onion
Some cilantro
½ cup pomegranate

For dressing:
2 cup yogurt
1 cup mayonnaise
3-4 tbsp lemon juice
1 tsp salt
1 tsp balck pepper
3-4 garlic cloves
¼ cup olive oil.

Instructions:
Cut the khubus as shown in the video. Fry on medium flame very well in olive oil until they are very crispy. Set them aside when done.

For the chickpea mixture, finely slice the tomato, onion (you can add spring onion if you prefer that) and cilantro. Mix it all with the chickpeas and set aside.

Finally for the dressing, first grind together garlic cloves and olive oil.
In a bowl add yogurt, mayonnaise, lemon juice, salt, black pepper and the garlic/olive oil mixture.

Add the first layer of the fried khubus. In the next layer add the chick pea mixture and then finally add the yogurt dressing.
Top it off with some pomegranates. And enjoy!
