We love stone fruit season. And we love adding a new twist on classic recipes. There’s no better tasting or lighter option that is this quick and easy to make salad. First, simply slice tomatoes, mozzarella and peaches. Then, drizzle with white balsamic vinegar, olive oil, salt, pepper and top with fresh basil. It’s one of the freshest salads you’ll enjoy this summer.

Why do they call it caprese?
The salad is named after the island of Capri. Capri is an island located in the Tyrrhenian Sea off the Sorrento Peninsula, on the south side of the Gulf of Naples in the Campania region of Italy. The recipe pays homage to the Italian flag with its Red (tomato), Green (Basil) and White (mozzarella) colors.

What is caprese?
It’s simple! Caprese is a salad that uses sliced mozzarella, tomatoes, basil, olive oil and/or Italian dressing. There’s various different recipes for a caprese salad now, but this are the basics! You can also drizzle with balsamic vinegar or honey. Your choice of using your favorite way to enjoy!

How are you supposed to eat caprese?
The answer is simple, use a fork! Using a fork, cut a piece of tomato, mozzarella and basil together in one bite. With our peach caprese version, you’ll want to be sure to add in a bite of that sweet Prima® peach!

Prima® peaches – A ripe and ready-to-eat peach will feel slightly soft to the touch.
Heirloom or similar style tomato – you want a beefier style tomato.
extra-virgin olive oil
white balsamic vinegar
basil leaves – you can leave whole or you can julienne.
mozzarella – you can buy pre-sliced or a log of mozzarella and cut the slices yourself.
kosher salt
freshly cracked black pepper

Step 1 – Prep: Slice the tomatoes and mozzarella to about the same thickness. Slice the peaches.

Step 2 – Plate: On a platter, arrange mozzarella, tomatoes, basil leaves and sliced peaches.
