Chicken salad is rich in lean protein and a decent source of iron.

Ingredients

200g chicken pieces
1/4 cup onion diced
3 sprig coriander leaves chopped (cilantro)
1/4 tsp salt
1/2 tsp grounded black pepper
1 tbsp chicken broth
2 tbsp mayonnaise

Step by step method

Bring to boil chicken with 1/4 tsp grounded black pepper and salt.
Reduce the heat and cook 7 minutes.
Remove from the heat. Cover and let it allow to sit for 10 minutes.
Meanwhile chop the onion.
After 10 minutes when the chicken is cool and chop it.
Combine all ingredients in a bowl and mix well.
Season with remaining black pepper.
