• 1 onion
• 1 cup risotto rice
• 3 cups water
• 1/2 cup pumpkin for wine
• 1/2 cup wine
• 2 cups diced pumpkin
• 6 Tbs olive oil
• 3 Tbs maple syrup
• 1/2 cup parmesan cheese
• 1/4 pound butter
• 1/2 pound arugula
• 1 lemon
