For this recipe, you’ll need:

200g of high-quality spaghetti
100g of salty pancetta or guanciale
2 large, fresh eggs
100g of Pecorino Romano cheese (it’s a must for that authentic flavour)
First, we’re going to cook the spaghetti al dente. Follow the instructions on the package for the perfect timing.
While the pasta is cooking, let’s make our carbonara sauce. In a bowl, crack the eggs and whisk them until smooth.
