It’s that time of year: The most delightful time of year, Thanksgiving time, the reason I do what I do. It’s giving…Thanks! This year, we’re addressing the age old question: how do I please everyone? My answer (when it comes to Thanksgiving and most things, really): you can’t. But this menu comes very close and we’re giving (some of) the people what they (mostly) want: Slow roasting turkey in lots of fat, doing gravy AHEAD of time, making potatoes TWO ways (mashed and crushed), roasting squash that’s just the right amount of sweet and forcing you to make A Very Crunchy Salad. We’re doing it all! There’s also green beans, PIPING FRESH Dilly Rolls and a gorgeous 2-ingredient cranberry sauce (but also the canned stuff is great). Still hungry?   2. I really need someone to make a clip starting at 11:24 – “My compromise, it’s not really a compromise, it’s just me doing what I want . . .” Chef gets to make what Chef wants.

  3. Stuffing needs to contain lots of stuff . It’s not stuffing at my house without 2-3,types of bread , three types of mushrooms, home made stock, roasted chestnuts, onions , shallots , celery , lots of fresh herbs , apples ,and butter of course.

  4. Turkey leg quarters are impossible to find. 😢 I went to 4 fancier-type grocery stores and none of them had whole turkey legs (or even let me pre-order it). I'll have to use drumsticks and thighs, separated. Was anyone else able to find them?

I have 30 people coming for Thanksgiving this year, somehow my house has become tha place, and I love it, I love to cook. And now I have some more ideas thanks to you!!!   7. love watching these. BUT..I have to say that when she taste tests something twice and uses the same spoon…eww!!! That is one of the reasons I get weirded out if I eat something someone else cooked. I will only use the same spoon more than once to taste if no one besides my boyfriend and I are eating what I'm making and he doesn't care if I do that.

I started my stuffing-making back in the day when we actually stuffed the bird with it: Pepperidge farms herbed cubed bread stuffing mix, minced onions & celery, dried sage, boxed stock, and a little less butter than originally called for. (They have reduced the amount of butter called for!) Eventually, over the years I modified it to include fresh herbs and a few other ingredients and made my own “dried out fresh” bread, part whole wheat and no longer stuffing, but “dressing,” baked in a casserole.
    Now I only want it the same way, and I returned to Pepperidge Farms, (still add plenty fresh herbs) and I never want to make it “different this year,” and only have a passing interest in recipes published and online.
    I like mine better than any other recipe! It’s tradition, right? I only make it once a year. Why would I make it different?

  9. I have no idea where I could get turkey legs or leg parts. They have not been available for a number of years. We used to buy them year round and always cooked them on the grill with woodsmoke in the summer. I miss them! Used them a lot for turkey soup & dumplings too. Yet I see content creators posting cooking ideas for them. I’m pretty sure Ina Garten could get them, or maybe anybody living in NYC, but not the rest of us!

  10. I make my “stuffing” now in an oval casserole. I’ve done round, I’ve done deep dish, square….anything goes! I never made it in a 9 x 13 lasagne pan, though. And that’s what a lot of people use.

  12. Alison, I have now been making your sourdough stuffing for the past 4 years. I make my own sourdough, and add fresh chopped thyme and sage to the bread dough itself. I'm now always happily on sourdough stuffing duty for Friendsgivings, and it's a hit every year! I like to add Italian sausage to it, too….and lots of celery and leeks because, you da boss!
    For Christmas, I like to make it with beef broth, and change up the spices to rosemary and thyme, and add some mushrooms. 😋

  14. Stuffing 2023 update…stale sourdough goes in crockpot with sauted onions, celery, mushrooms, spices and chicken broth. Its the bomb…light, so easy…perfect dressing!!!😋😋😋😋

  15. Its so confusing, can you please explain a few things? Do you cook it 3 hours covered then 1 hour not covered? So total of 4 hours?

    In each dish is it 2 cups? 50% oil and 50% fat? Or 4 cups in each dish?

    Making this tomorrow so would love a response! 😅

Alison Roman…… I made your turkey legs/thighs confit (my husband is, as we speak sieving the leftover oil to save)……… absolutely flipping delicious, made the recipe as written……. we did wings too, but I did a dry brine on those too with addition sage & thyme and those were praiseworthy as well……………… I also made your mashed potatoes……. and they were delicious……………. but that turkey……. was the absolute bomb….. it's 10:00 pm and my husband just said " You can do that again"…….. speaking about that turkey! thank you, thank you, thank you! (oh wait, we also did your brown butter gravy…… my husband was razzing me about adding the sherry vinegar and soy sauce….. until he tasted it…… and said, loudly…………… WOW!)……..all in all……… out of the ball park, girl.

  20. God I love you and your food sooooooo much, BUT this isn’t Jimmy Kimmel. Please please don’t feel you need to do that “bad girl” gameshow edits type crap! You are enough! You are MORE than enough!!! You don’t need it!! Tell your people, this is when people turn it off. It’s about you and the food. Not being clever! Trying too hard is a turn off. I was going to tell people about you.
