In a mixing bowl, combine 250g of ricotta cheese, 100 ml of heavy cream, and 100g of grated cheese.

Choose sharp cheeses like Cheddar, Manchego, Parmesan, etc.

Mix until well combined and smooth. Season with a pinch of salt and some freshly ground black pepper to taste. Set aside.

Prepare your pie dish (mine is 22 cm) by buttering and then dusting it with flour.

If you’re using store-bought puff pastry, follow the package instructions for thawing. The link to the pie crust recipe I used is in the description below.

Roll the dough on a floured surface until it’s around 5-6mm (1/4 inch) thick.

Transfer the pastry to a pie dish with the help of a rolling pin and trim excess dough.

Decorate the pie edges as you like (e.g. fork chevrons, braided edge, etc.). I opted for fluting this time.

Chill the pie crust in the fridge or freezer for about 10 minutes. Dock the pastry by poking it all over with a fork to prevent it from puffing up too much during par-baking.

To prevent the pastry from rising excessively, place a sheet of creasy parchment paper over the pastry and fill it with baking beans or pie weights.

Par-bake the crust in the oven preheated to 180°C (350°F) for about 10 minutes. This step is essential to ensure that the crust stays crispy, even with the creamy filling.

Carefully remove the parchment paper and baking beans or weights and return to the oven for another 5-7 minutes.

Meanwhile, cut fresh figs.

Brush the pie edges and its bottom with egg wash. This will favor a golden brown color and prevent pie sogginess as well.

Spread the cheese mixture evenly over the par-baked pie crust and decorate your pie with fresh figs.

Place the prepared pie back in the oven for 15-20 minutes or until the cheese melts and the edges are slightly browned.

Once baked to perfection, allow the pie to cool for a few minutes. Refrigerate overnight for maximum stabilization.

Drizzle the pie with honey generously before serving.

Warm, room temperature, or cold, this pie will create a delightful blend of flavors that’s sure to impress your taste buds.

The combination of the creamy cheese filling, sweet figs, and honey drizzle on a crispy and flaky base is incomparable.
