I brought home my first acorn squash of the season; roasted it up; and gave it some of my Mediterranean/Middle Eastern-ish twists … pomegranate arils, pomegranate glaze, pistachios, sumac, and a creamy lemony vegan yogurt topping. 💗 The result … 100% plant-based with comfort food vibes. And soooo tasty! 😋
