Love this quick fresh mango salsa recipe- use it on fish or vegan tacos, on salads, rice or noodle bowls!

Ingredients

1 red sweet bell pepper, diced
1 yellow or green bell pepper, diced
1 shallot, minced
2 green onions, chopped
2 mangos, diced
1 jalapeño minced *optional

How to:
1) mix everything in a medium bowl. Chill in fridge x30min or can eat asap lol. Yum.
