  1. But… why? Cod doesn’t need to be tenderised ever, it cooks super quickly anyway, and you’ll lose the beautiful flakiness. I could see the point maybe if you were using up trimmings and forming them together into a patty. I’d much rather eat the exact same piece of cod with the exact same coating but without mashing it up flat first.
