The beetroot salad with feta, arugula, and walnuts is a healthy, easy, and flavorful recipe. Beetroots are rich in vitamins and antioxidants, arugula adds a peppery kick and nutrients, feta cheese provides creaminess and protein, and walnuts bring healthy fats. It’s easy to make, visually appealing, and a fantastic addition to any meal.

Ingredients:
3 medium beets
5 oz arugula
1/2 cup toasted walnuts
1/2 cup (3 oz) crumbled feta cheese

For the dressing:
4 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp salt

Instructions:
1. Prepare beets: trim beet stems and leaves, peel if needed, cut beets in half.
2. We prefer to cook beets in the microwave (10 mins). You can also roast beets (40 mins) or boil beets (30 mins):
In the microwave-safe dish, cover halved beets with water. Cover the bowl with the plastic wrap and poke holes in the plastic wrap. Heat on high for 10 minutes.
3. Place fresh arugula in a large bowl
Cut the cooked beets into cubes and add beets to the bowl
Add feta cheese
Chop toasted walnuts and ddd walnuts to the bowl
4. For the dressing: add 4 tbsp of olive oil, 2 tbsp balsamic vinegar and 1 tsp salt in the different bowl. Stir it well and pour into the main bowl
5. Mix everything well, serve and enjoy
