🐚 STIR FRY CLAMS 豉椒炒蜆
2 lb 10 oz of short neck clams (22 pieces)
2 tsp of fermented black beans
1/2 red pepper
1/2 yellow pepper
1/2 long pepper (spicy)
2 stalks of scallions
4 slices of ginger
1 tsp of garlic
1 tbsp of shaoxing wine
1/2 cup of water (as needed)
1 tbsp of cornstarch slurry

SAUCE
1 tbsp of oyster sauce
1 tbsp of soy sauce
1/2 tbsp of dark soy sauce
1/8 tsp of white pepper
1/8 tsp of sesame oil
A pinch of salt
