Roasted Cauliflower and Carrots in 30 Minutes. Healthy, Tasty and Easy. Ingredients Below. Hi Guys, today I’ll show you How to Make Roasted Cauliflower and Carrots, a healthy and tasty side dish. This is a recipe you can easily double when you have lots of people for dinner.
Ingredients
1 head cauliflower – 2lbs/900g
5 medium carrots
3 tbsp olive oil
1 Tbsp Fresh Thyme or 1.5 tsp dried (sub oregano or another herb)
½ tsp Garlic powder
½ tsp Onion powder
¾ tsp salt – or to taste
½ tsp ground black pepper
Parmesan and Lemon juice are optional

First, heat your oven to 425 F or 205 C. We’ll need a baking sheet for roasting the vegetables. We’ll use one head of cauliflower, about 2lbs/900g and 5 medium carrots. This will give you four to six servings, Wash the cauliflower really well and take off all the outer leaves. Cut off the stalk. The florets should be cut into bite size pieces. Put them right on the baking sheet. Peel the carrots, wash them and trim the ends. Slice them on a diagonal, less than ¼ inch thick. Place them on the baking sheet separately from the cauliflower. For herbs, I like to use fresh thyme. Chop whichever herbs you like. Dried thyme or oregano is also fine. This is 1 tbsp of fresh thyme, if you’re using dried herbs, use 1.5 tsps.
Drizzle about 3 tbsps olive oil all over the vegetables, ½ tsp salt, ½ tsp ground black pepper and the herbs. Mix the cauliflower and the carrots separately. You don’t want to combine them in case one cooks faster than the other. Cook in the heated oven for 30 minutes. Check after 25 since ovens vary. Taste and make sure they’re tender, yummy perfectly cooked. The top of the cauliflower gets a little brown, it almost looks like parmesan cheese even though we didn’t add any. By the way you can sprinkle grated parmesan all over and put the baking sheet back in the oven for a few minutes. Add more salt if you like and then mix them together. A squeeze of fresh lemon juice at the end is also nice. Cheese and lemon juice are optional of course, the roasted vegetables taste great without any additions.

Ms. Anita , very nice recipe & looks delicious, I think I will add peeled quartered turnips, as we all like those, believe it or not, all my 6 grand children like nearly every veggie, & they will eat this & none of them are over 10 yes old, they are great healthy eaters , God Bless you & yours.
